ABOUT THIS ATTRACTION

Mali Ston bay is the quiet arm of water behind the walls — shallow, brackish where the fresh karst springs meet the sea, and naturally rich in the plankton that grow the European flat oyster. Oyster farming here is documented from Roman times and formalised under Ragusa; the farms today still run on the same wooden rack-and-rope system, and the bay’s water quality is monitored as an official designation. The oysters are eaten within sight of the water they grew in — at the farm sheds on the Mali Ston shore or at the waterfront tables of the little town — usually raw, with a drop of lemon, and never far from a glass of Pošip or a Dingač from the hills above.

HISTORY & BACKGROUND

The story behind it

Ragusa regulated the Mali Ston oyster beds in its statutes centuries before modern aquaculture existed; the bay’s mix of salt and fresh karst water gives the oysters their known sweetness, and the harvest follows the months with an \u201cr\u201d. The farms survived the republic, the French, the Austrians and the 1990s war, and the bay’s oyster festival each March opens the season. Mussel farming shares the same racks, and the bay’s fish restaurants have become a destination in their own right.

Why it matters

This is one of the few places where a food, its water and its history are all visible at once — oysters eaten at the edge of the bay that has grown them for two thousand years. For a visitor it is the essential Pelješac meal.
